Happy Easter

………What!!? No buns?

I find it odd. It seems like the Easter Bunny is overtaking the fellow after whom the holiday was originally devoted but there doesn’t seem to be any protest. At Christmas there were plenty of ‘Keep Christ in Christmas’ signs but not a single ‘Keep Easter about Jesus’ sign appeared this past week. The chocolate egg crowd seems to be winning.  I did see at the Dollar store a bag of Easter favours called “Jesus Promise Seeds.” They were little packages of pastel coloured candy corn. Each package had a Bible promise written on it. I don’t know how many people are familiar with promises anymore. My Grandmother brought them out after Sunday dinner; they were little printed cards in a slot in the top of a plastic loaf of bread (the bread of life). Each card had a Bible verse on it – a promise. We would each have to choose one and read it aloud. I don’t recall what they said but the whole business always made me nervous. I often didn’t understand the verse and was wary of promising something that I didn’t really understand.

Anyhow, I always ask myself at Easter whether or not it is hypocritical to celebrate if I don’t attend church. This year I decided not to do anything at all but in the final hour I just couldn’t resist. So we did have a couple of Easter themed meals yesterday. Maybe more of a spring theme; you know, eggs and chicks and chocolate.

East breakfast: Eggs Benedict and maple bacon. After all, maple syrup is a traditional spring thing, right?

No that is NOT rabbit meat! Pulled pork in potato nests with collard greens.

I made Boston cream pie from scratch for dessert. A few malted milk eggs gave it an Easter theme just in case the chocolate ganache didn't.

I had the last of the malted milk eggs for lunch today but there is plenty of cake left. I do, though, regret not having the hot cross buns. There’s always next year.

Hot cross buns! Hot cross buns!
One a penny two a penny – Hot cross buns

Happy Spring.
