An Easter Assortment

….of bunnies and sweets and all things eggy.

I am so far behind in my posts that I haven’t even written about last Easter yet. Last April we were on the road and arrived at some friends’ house in Waltham, Massachusetts just in time for Easter dinner. As we pulled up in front I spied a wild bunny sitting on their lawn. It lingered long enough to for me to take a snap. I don’t think it was the Easter bunny but who knows for sure. bunnyDinner was divine with great food and conversation. One of the guests brought a special dessert called a Simnel cake. simnel cakeIt was beautiful as well as delicious. A Simnel cake is an Easter light fruitcake with marzipan filling and topping. The 12 little marzipan balls on top represent the 12 apostles minus Judas, and Jesus. We devoured it,  apostles and all. Sadly we had no room for these pretty macaroons. IMG_1861This year I had to cook my own dinner and the only Easter bunny I saw here in Florida was this bored bunny at the mall last week DSC_0882 and my sister sent me these tragic chocolate bunnies: easter As for eggs, we had them for breakfast, old-style poached in the pot, and served on a bagel with warm homemade tomato salsa and salty American bacon. Most yummy. poached egg with tomato salsa Had them again in a spinach salad at supper. Try as I might, I was unable to find a face in the shape of this boiled egg gone wrong. I was hoping for something of religious significance to give it more clout. egg gone wrongKind of looks like some faceless French aristocrat. Whoever you are, that’s a mighty fine ruffle down the front of your shirt.

I don’t think apple pie is an Easter tradition of any kind but it was what I was craving. My little apple cookie cutter which I use to make the vents is back in Canada and the only one I have here is a fish. I used it, confident that the fish is a strong symbol associated with Christianity. apple pieThere is, however, no significance in the fish being blackened. That is the outcome of me getting used to this new-to-me oven which runs very hot. Hmm, they almost look chocolate and isn’t chocolate somewhere behind the meaning of Easter? Okay, I’m trying way too hard now. Anyhow, I miss my family and my friends, especially this holiday, but we had a fine Easter and I hope you did too. © Judy Parsons 2105

    A side view of your boiled egg looks like Jabba the Hutt from “Star Wars”. Not much Easter significance there! With respect to that beautiful apple pie with the fishies, Jesus did feed his followers the loaves and fishes. Without sounding sacrilegious, I’m sure they would have preferred your pie!!

    Happy Easter!
    Arrived back from Atlanta leaving warm temperatures and greenery behind to greet snow and ice with more snow today (Tuesday) just to really make the season festive. All the birds seem to be ending their songs with a question mark. Had a front step vist from an American Woodcock which normally would be rustling around on the ground but there is no ground. All that to say your Easter update gives us a bit of vicarious Spring. Don’t be in any big rush to get back.
